Honey Crumble with Kawkawa Glazed Fruit
It's a crumble, but not as we know it... Kasey and Kārena turn a classic dessert on its head.
Serves 4
Ingredients
- 1 tsp cinnamon
- 1/2 cup brown sugar
- ¼ cup honey
- 1 cup flour
- 1⁄2 cup rolled oats
- 75gm butter
- Pinch of salt
Method
Preheat oven to 170 degrees
Line a baking tray with baking paper
Rub together all of the ingredients until a crumb forms
Spread evenly onto the baking sheet and bake for 25 mins or until golden and crunchy
Remove from the oven to cool
Kawakawa Glazed Fruits
- Selection of seasonal fruits
- 3 fresh Kawakawa leaves
- 1 cup 1:1 simple syrup
Method
Prepare and clean fruit
In a small pot add the sugar syrup and kawakawa leaves and bring to a warm heat and allow the kawakawa to steep for at least 15 mins
Leave the syrup to cool
Lightly dress the prepared fruit with the syrup
Vanilla Honey Cream
- 2 cups cream
- 1 tsp heilala vanilla extract
- 1 tbspn honey
Method
Add all of the ingredients to a bowl and whip until soft peaks form
Serve the crumble with the fruit and top with cream
